Hazelnut Meet Balls (Great Holiday Appetizer)

Ingredients

Hazelnut Meetballs

  • 1-1/2 cup Saltine Crackers
  • 3/4 cups Ground Columbia Empire Farms Hazelnuts (raw)
  • 1 Large Chopped Onion
  • 3/4 cups Grated Yellow Cheddar Cheese
  • 1/2 teaspoon Salt
  • 1-1/2 teaspoon Sage
  • 2 Pressed Garlic Cloves
  • 4 Eggs

Marionberry Sauce

  • 1/4 cup Olive Oil
  • 1/4 cup Vinegar
  • 3/4 cups Columbia Empire Farms Marionberry Preserves
  • 1/2 cup Ketchup
  • 2 tablespoons Brown Sugar
  • 1 Large Onion Chopped Fine
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Oregano

Directions

Hazelnut Meetballs
Step 1
Mix all ingredients with hands and form into balls (makes 32 to 35 balls)
Cover with foil and Bake at 350 degrees for 30 minutes
Marionberry Sauce
Step 2
Mix, bring to a boil 1 minute. Pour over baked Hazelnut balls and bake an additional 10 to 15 uncovered at 350 degrees.
You're ready to serve

Oregon’s Favorite Pepper Jelly Cornbread

Ingredients

  • 1/2 cup All purpose flour
  • 1-1/2 cup Cornmeal
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1/2 cup Shortening, melted
  • 3 Eggs, beaten
  • 1/4 cup Columbia Empire Farms Mango Peach Pepper Jelly
  • 1 can Whole kernel corn, drained
  • 8oz Sour cream

Directions

Step 1
Preheat oven to 400 degrees. In a medium mixing bowl, add all of the above ingredients and stir well. Grease an 8x8 inch baking pan and pour mixed ingredients into it.
Step 2
Bake for 15 to 20 minutes or until golden brown. If they're done, a toothpick will come out clean. Serve warm or cut in half and toast or grill. Wrap well to keep moist.
